Unfermented Cocoa Beans

Sun-dried, unfermented lots for grinding, butter pressing, and industrial use.

Unfermented beans are dried straight after harvest, giving a neutral profile suited to cocoa butter pressing, powder production, and industrial grinding where fermentation flavour is not required. Lots are cleaned, dried to export moisture levels, and documented with the same rigour as our fermented range.

When unfermented beans are the right choice

Unfermented beans cost less and are often available on shorter lead times, so pressers and industrial processors choose them when butter or powder is deodorised or heavily alkalised and cup character matters less than yield. They also suit applications where cocoa solids matter more than developed fermentation flavour, though pressing still removes most volatile aroma compounds from the butter fraction.

Quality still counts

Skipping fermentation does not mean skipping standards. Our unfermented lots are dried promptly to export moisture levels to prevent mould, cleaned of foreign matter, and graded for bean count and defects exactly like our fermented range. The specification sheet tells you precisely what is in the bag, no surprises at destination.
