Sulawesi Fermented Cocoa Beans

Fully fermented single-origin lots from South Sulawesi cooperatives, chocolate-forward, traceable, and export-ready.

Sulawesi fermented cocoa beans are our flagship single-origin lots, grown in the high-altitude estates of South Sulawesi and box-fermented for five to six days before sun-drying on raised beds. The result is a clean, chocolate-forward profile with mild acidity that chocolate makers, couverture producers, and grinders return to season after season. Every lot below is cut-tested to at least 85% fermentation and traceable to the cooperative that grew it.

Why buyers choose Sulawesi fermented beans

South Sulawesi's volcanic soils and highland estates produce beans with a chocolate-forward base and mild acidity, the profile most single-origin bar makers look for from Indonesia. Because we buy from the same partner cooperatives every harvest, fermentation levels and bean counts stay consistent from container to container, so your roast and conch profiles hold steady across repeat orders.

Quality, certifications, and shipping

Each lot is cut-tested in our Makassar grading room, screened to a bean count of 100 or better (SNI size class A), and cupped for smoke taint before it clears for export. Selected lots carry Rainforest Alliance certification, and our Makassar processing and export warehousing facility operates under ISO 22000. We ship FOB, CFR, or CIF from Makassar in new 60 kg jute bags with food-grade liners, with phytosanitary and fumigation certificates, certificate of origin, and loading photos included.

Frequently asked questions

Ordering, samples, shipping, and payment, answered by our export desk.

Why do buyers start with Sulawesi fermented beans from this collection?

South Sulawesi volcanic soils produce a chocolate-forward base with mild acidity that many single-origin programmes use as an Indonesian benchmark. We buy from the same partner cooperatives every harvest, so fermentation and bean counts stay consistent container to container.

Which certifications appear on Sulawesi fermented collection lots?

Selected lots carry Rainforest Alliance certification; Organic and Fairtrade options are listed separately on certified SKUs. Every shipment includes ISO 22000 scope documentation and Halal (BPJPH) where applicable, with certificate sets confirmed on the contract.

What minimum volume applies to Sulawesi fermented container orders?

One 20 ft FCL, about 13 MT, in new 60 kg jute bags with food-grade liners. Lead time is typically two to three weeks for conventional lots and longer on certified allotments. Mixed-origin trial containers can be discussed for qualified buyers.

Can I sample Sulawesi fermented beans before booking a full container?

Yes. We courier 500 g to 2 kg with cut-test photos and moisture readings; sample costs credit against your first order. Mention whether you are comparing Sulawesi against Sumatra or Papua so we send the right lots.
