Product overview

Natural cocoa powder milled from Indonesian press cake with no alkali treatment, so it keeps its acidity, its lighter colour, and a brighter cocoa flavour. Because it is acidic it reacts with baking soda, which makes it the correct choice for recipes built around that pairing. Supplied at 10 to 12% residual fat and milled to at least 99.5% through 75 microns.

Why the pH matters

Untreated powder keeps the natural acidity of the bean, which is what gives it a sharper, fruitier cocoa character and a lighter reddish brown colour. That acidity is also functional: it is the acid half of the classic acid and baking soda reaction, so substituting alkalized powder into such a recipe without changing the leavening leaves you with a flat, dense result. Fat sits at 10 to 12%, moisture at or below 5%, and every batch is sieved and metal-checked before packing.

Applications and buyers

Traditional baking recipes leavened with baking soda, brownies and cookies where a brighter cocoa note is wanted, and applications where a lighter cocoa colour suits the product. Also used by makers blending their own powder profile who want the acidic base to work from. If you are unsure which grade your formulation needs, order natural and alkalized samples together and test both in the finished product.

Packing, MOQ and shipping

Packed in 25 kg kraft bags with a food-grade liner, minimum order 3 MT, shipped FOB, CFR, or CIF within 2–3 weeks of confirmation. Powder cakes if it takes on moisture, so store it sealed, dry, and off the floor, and rotate stock within about two years. Certificate of analysis and Halal documentation travel with every shipment.

Frequently asked questions

Ordering, samples, shipping, and payment, answered by our export desk.

What is your minimum order quantity?

For fermented grades the minimum is one 20 ft container (about 13 MT). For unfermented Sulawesi and Java beans we can arrange partial loads from 5 MT, and LCL trial lots are available for qualified first-time buyers, subject to consolidation schedules.

Do you provide samples before ordering?

Yes. We courier 500 g – 2 kg samples of current lots, including cut-test photos and moisture readings. Sample costs are credited against your first order.

Which ports and incoterms do you work with?

We ship from Makassar and Surabaya under FOB, CFR, or CIF terms to most major ports. Every shipment includes phytosanitary certificate, fumigation certificate, certificate of origin, and full loading documentation.

What payment terms do you accept?

Standard terms are 30% advance with order confirmation and 70% against copy of bill of lading. Irrevocable LC at sight is accepted for established buyers and larger contracts.

Which certifications can you supply?

Selected lots carry Rainforest Alliance, Organic, Fairtrade, and Halal (BPJPH) certification. Our Makassar processing and export warehousing facility operates under ISO 22000 and HACCP. Certification availability is listed on each product page.

Can you provide third-party inspection and laboratory COAs?

Yes. We can arrange SGS or equivalent pre-shipment inspection at the loading port, and ISO/IEC 17025 laboratory certificates covering moisture, bean count, cut-test appearance, and microbiology on request. Inspection costs are quoted separately and agreed before booking.

Can you run a custom fermentation programme?

Yes, for wholesale buyers. We box-ferment against a written protocol (day count, turning schedule, target cut-test, drying moisture) booked on a named cooperative harvest, starting at one 20 ft container (about 13 MT). Trial containers are available before a season contract. This is a container programme, not single-bag or micro-lot supply.

Do you offer OEM or private-label packing?

Yes. On recurring wholesale contracts we stencil buyer marks, print custom lot codes, and issue packing lists to your bag-mark requirements while keeping our legal entity on the commercial invoice unless otherwise agreed. Minimums stay at our standard wholesale floors. Send artwork and language requirements with your quote request; programme details are on the services page.
