Box-fermented and sun-dried lots developed for chocolate-forward flavour.
Fermentation is where chocolate flavour begins. Our fermented lots are box-fermented for five to six days and sun-dried on raised beds, then cut-tested in our grading room to verify fermentation level before export. They are the natural choice for chocolate makers, couverture producers, and grinders who need developed flavour precursors.

Why fermentation matters
Fermentation converts the sugars in cocoa pulp into the flavour precursors that roasting later turns into chocolate. Under-fermented beans taste flat, bitter, and astringent no matter how well they are roasted. If your product depends on cocoa flavour, bars, couverture, premium powder, fermented beans are not optional, and the fermentation level should be verified, not assumed.
Our process and how we verify it
Our lots are box-fermented for five to six days with regular turning, then sun-dried slowly on raised beds to preserve the developed flavour. Before export, every lot is cut-tested in our grading room: we slice a bean sample and count the fully brown, well-fissured interiors. The fermentation percentage on your specification sheet comes from that test, and you receive the results with your documents.
Who buys fermented beans
Bean-to-bar makers, couverture producers, and grinders producing flavour-grade liquor and powder are our core fermented buyers. If you are choosing between fermented and unfermented, the rule of thumb is simple: buy fermented when the customer tastes the chocolate, buy unfermented when you are pressing butter or need the lowest-cost cocoa solids.
Frequently asked questions
Ordering, samples, shipping, and payment, answered by our export desk.
What is your minimum order quantity?
For fermented grades the minimum is one 20 ft container (about 13 MT). For unfermented Sulawesi and Java beans we can arrange partial loads from 5 MT, and LCL trial lots are available for qualified first-time buyers, subject to consolidation schedules.
Do you provide samples before ordering?
Yes. We courier 500 g – 2 kg samples of current lots, including cut-test photos and moisture readings. Sample costs are credited against your first order.
Which ports and incoterms do you work with?
We ship from Makassar and Surabaya under FOB, CFR, or CIF terms to most major ports. Every shipment includes phytosanitary certificate, fumigation certificate, certificate of origin, and full loading documentation.
What payment terms do you accept?
Standard terms are 30% advance with order confirmation and 70% against copy of bill of lading. Irrevocable LC at sight is accepted for established buyers and larger contracts.
Which certifications can you supply?
Selected lots carry Rainforest Alliance, Organic, Fairtrade, and Halal (BPJPH) certification. Our Makassar processing and export warehousing facility operates under ISO 22000 and HACCP. Certification availability is listed on each product page.
Can you provide third-party inspection and laboratory COAs?
Yes. We can arrange SGS or equivalent pre-shipment inspection at the loading port, and ISO/IEC 17025 laboratory certificates covering moisture, bean count, cut-test appearance, and microbiology on request. Inspection costs are quoted separately and agreed before booking.
Can you run a custom fermentation programme?
Yes, for wholesale buyers. We box-ferment against a written protocol (day count, turning schedule, target cut-test, drying moisture) booked on a named cooperative harvest, starting at one 20 ft container (about 13 MT). Trial containers are available before a season contract. This is a container programme, not single-bag or micro-lot supply.
Do you offer OEM or private-label packing?
Yes. On recurring wholesale contracts we stencil buyer marks, print custom lot codes, and issue packing lists to your bag-mark requirements while keeping our legal entity on the commercial invoice unless otherwise agreed. Minimums stay at our standard wholesale floors. Send artwork and language requirements with your quote request; programme details are on the services page.
